Nel frattempo fate bollire l’acqua, salate e cuocete la pasta al dente. Quando è pronta, scolatela e unitela agli altri ingredienti, aggiungendo abbondante olio di oliva.
Mescolate e servite a temperatura ambiente.
This is a quick, easy – and really tasty! – recipe for the summertime. I prepare it often when it’s warm and I find it perfect for a barbecue, a party, or to take with you for a trip, a day at the beach, or, why not, to the office.
All you need is:
500gr rucola
4-5 ripe tomatoes
250gr mozzarella di bufala
500gr short pasta (farfalle)
extra virgin olive oil
Wash the tomatoes and cut them in cubes. Wash the rucola, cut off the ends, and slice it groosly. Cut in cube also the mozzarella, then put all the ingredients into a salad bowl.
In the meantime let the water boil, add salt, and cook the pasta al dente. Drain the pasta and mix it in the bowl together with the other ingredients, adding abundant extra virgin olive oil. Serve at room-temperature.
